Mathilde’s Cheese
A French cheese born from Dutch soil
Mathilde van Otterloo fell in love with cheese several years ago, and French cheese in particular. Her passion led her to wonder why she shouldn’t make cheese herself? In order to do so, she had to work with milk which was a unique challenge. Milk is never the same, which makes crafting a consistent cheese an art.
In her cheese workshop in Kockengen, Mathilde produces according to the French method. Mathilde’s cheese is called Fransje and as Fransje matures, it undergoes a fascinating transformation. The white mold rind provides a perfect base for blue mold growth. This combination of fungi leads to an extra complex flavor without any harm.
We tasted Fransje extensively with our team, and the verdict was unanimous: : “This cheese is a winner.”
