Eating less meat is a sustainable practice. Removing it from the food chain altogether is not. And this is what De Herkomst is doing. Circular, transparent and above all: together.
De Herkomst is a farm where they work on honest and circular meat. Delicious meat from pigs fed on 100% residual feed from and around the city of Amsterdam and who are eaten by local residents.
The pigs are from an authentic breed that grows and matures slowly. They are raised on food scraps, live in a natural habitat and are most happy outside.
The driving force behind De Herkomst is Dirk Koolen. He grew up in Veghel, Brabant, where his interest and love for pigs originated. Dirk went to study and live in Amsterdam. For the restaurant Instock, he organized the logistics of residual streams from the store. Then he started working independently on his passion for circular food production: residual streams that can be reused in social catering kitchens or to feed pigs for a more responsible pork meat. Via collaboration with artisanal butchers, Dirk’s passion led to the offerings De Herkomst now stands for.
