Koen Omes has been in the wine industry since he was 22 years old, “Perhaps a little late to start” he says. At 24, he obtained his WSET3 certification and became a sommelier at Rijsel in Amsterdam. “This is where I learned the most, when working with such an expansive cellar”. His autodidact approach drove him to learn more about the technical side of wine, with a curiosity for soil types and the chemical make-up of wines.
His “Wine and volatile acidity” (V.A) workshop is his attempt to explain a facet of the wine world that is often a great point of discussion.
What is V.A.? And what other types of acidity are present in wine? Generally V.A. is seen as a wine fault. Some winemakers make conscious use of it though. What causes V.A. to develop, or rather what prevents its development?
