– Imereti, Georgia
In the cradle of winemaking, Georgia’s Imereti region, Baia’s Wine offers a window into one of the world’s oldest wine traditions. Managed by Baia Abuladze and her siblings, Gvantsa and Giorgi, this family winery revives winemaking techniques reaching back 8,000 years.
The Abuladze family’s journey began in 2015, driven by a mission to restore Georgia’s heritage grape varieties. In their family cellar, wines are fermented in traditional qvevri (clay vessels) using native Imereti grapes like Tsolikouri, Tsitska, and Krakhuna.
Baia’s Wine has emerged as a pioneer in Georgia’s organic wine scene, gaining international attention for some of its standout bottles. The family’s Otskhanuri Sapere red showcases one of Georgia’s rarest native grapes, with flavors of dark cherry, spice, and a hint of earthy minerality. Aged with minimal sulfur, this red has gained popularity in the U.S. wine scene, appearing on wine lists at top restaurants and wine bars.
Another highlight is the amber-hued Krakhuna, fermented on its skins for notes of honey, stone fruit, and soft herbs. This skin-contact wine offers a savory finish that pairs well with rich dishes.
For those seeking supply chain transparency, Baia’s Wine partners with the Cardano Foundation to enable consumers to verify each bottle’s authenticity from farm to table. Using the Cardano blockchain, every step of the supply chain is securely recorded, ensuring each bottle’s journey is as transparent as it is authentic.
