Orsi Vigneto San Vito, located in the hills of Bologna in Valsamoggia, has ancient roots tracing back to medieval times.
The estate sits at an altitude of 200 meters, cultivating vines on soils composed of calcareous clay and loam. Since taking over in 2005, Federico Orsi and Carola have transformed San Vito into a full-cycle farm, where respect for nature guides every decision. Beyond the vineyard, the estate grows seasonal vegetables in collaboration with other organic farmers in Valsamoggia to supply local restaurants. They also raise heritage-breed Mora Romagnola pigs that roam freely in the woods, fields, and vineyards, contributing to the farm’s biodiversity.
In the cellar, Federico and Carola avoid invasive oenological practices, relying on spontaneous fermentations, indigenous yeasts, and aging without filtration or clarification.
One of Orsi’s standout creations is Sui Lieviti Plus², a blend of 50% Alionza and 50% Pignoletto. This limited-edition sparkling wine undergoes spontaneous fermentation in old acacia barrels and is bottled without degorgement. Another noteworthy wine is Rancid Grotto, a 100% Pignoletto harvested at full ripeness from their best vineyard. It’s a testament to the depth of San Vito’s wines.
