Unique organic cheeses from regenerative farm Buitenverwachting
Meet Marrit Schakel and Bas van Rijn, sixth-generation farmers from Hoogmade, and owners of one of the few regenerative farms in the Netherlands. The goal of a regenerative farm is to maximize biodiversity, and Marrit and Bas’ goal is to make the best cheese. The duo keeps 42 dairy cows and 19 goats on their 32 acres of land.
Buitenverwachting’s organic cheeses are considered an insider’s tip among foodies. Marrit, a cheesemaker and dairy master, makes natural cheeses with various herb rinds, including dandelion from their land, and a “mita mita” cheese with a heart of ash.
Marrit and Bas are currently in the rollout phase of an ambitious experiment: they are landscaping their land with edible hedges for the animals. Some parts of the land are being flooded to keep more insects around, thus attracting more meadow birds. The goal is to create a regenerative farm that is future-proof to a changing climate.
