For many an inspiration. A pillar in natural wine. His 2022 Vin de France ‘Josette’ was called as one of the best natural wines of the year by Aaron Ayscough.” We’re talking about Nicolas Carmarans.
Before turning to winemaking, Nicolas Carmarans owned one of Paris’s pioneering natural wine bars, Café de la Nouvelle Mairie. In the early 2000s, he left the city to return to his native Aveyron, in France’s rugged Massif Central, where he revived forgotten vineyards and began making wine.
Today, joined by his wife Biba, they craft wines that defy the region’s rustic reputation, marked by freshness, energy, and precision. Their reds, made from the native Fer Servadou, are light, vibrant, and lifted with depth and elegance. That elegance? Biba’s touch, Nicolas tells us.
Their white, Selves, is Chenin Blanc reimagined through the lens of the Aveyron: mineral, precise, and alive with mountain energy.
