Breaking the Mould With Under Construction: The Next Generation

The wines created by Dominik Machater with his label “Under Construction” are quite exciting.

Grüner Sylvaner and Blauer Wildbacher–two native Austrian varietals–play a pivotal role in his quest to break the norms and traditional styles of the “Schilcher region,” where high-acid rosé dominates.
In 2019, Dominik took over the reins of his family winery and transformed it into an organic and biodynamic winery.
In this workshop “Breaking the Mould With Under Construction: The Next Generation“, we explore Austria’s (and Western Styria’s) indigenous grapes and Dominik will dive deep into the differences of both the conventional and the natural versions of these wines.
This will bring you at one hand a deeper understanding of taste and flavor profiles. It will help you also to go beyond the hype when it comes to natural wine. And last but not least it will give you a cultural perspective. For younger generations of winemakers with contemporary ideas, following the footsteps of the family estate can be a serious challenge in traditional viticultural areas. Developing an understanding of generational changes in winemaking philosophy, will bring you a deeper understanding of wine in general.
